Aquel ni\u00f1o flaquito nacido en el peque\u00f1o pueblo italiano de Villanova Mondovi es hoy a sus 52 a\u00f1os \u00abel chocolatero\u00bb m\u00e1s reconocido en el mundo.<\/p>\n<p><strong>M\u00e9xico, 26 de noviembre de 2017 (D58).-<\/strong> \u00abHay que hacer lo que otros no saben hacer ni conocen. Hay que ser un so\u00f1ador, y eso supone pensar en lo que viene despu\u00e9s cuando hoy haces algo, y estudiar y experimentar y conocer y viajar\u00bb, afirma el chef Bessone de visita en M\u00e9xico, cuna del cacao, donde ha dado un curso de platillos con el uso del chocolate como la base del sabor.<\/p>\n<p>Invitado por la Fundaci\u00f3n Herdez con motivo de la II Semana de la Cocina Italiana en el Mundo, Bessone imparti\u00f3 la conferencia \u00abItalia y M\u00e9xico: un conjunto de culturas ancestrales\u00bb con el objetivo de establecer una comparaci\u00f3n entre las dos culturas, dos caras de la misma moneda, a trav\u00e9s de su riqueza gastron\u00f3mica.<\/p>\n<p>\u00abEstamos en la cuna del cacao. La cultura del cacao es posible gracias a M\u00e9xico, un pa\u00eds que consume m\u00e1s de lo que produce y que tiene una gastronom\u00eda y cultura del chocolate sin igual\u00bb, explic\u00f3 a la agencia de noticias EFE.<\/p>\n<p>\u00abLos campesinos mexicanos conocen el cacao. La historia se pasa de padres a hijos por generaciones y lo cultivan con mimo porque nada se cultiva mejor que lo que es para uno mismo\u00bb, agreg\u00f3.<\/p>\n<p>Este gastr\u00f3nomo con especialidad en chocolater\u00eda y maestro chocolatero de nivel internacional es adem\u00e1s, como buen italiano, un hombre apasionado que derrama todo su ardor en el cacao.<\/p>\n<p>Veinte a\u00f1os despu\u00e9s de ser reconocido como un experto y tras 141 viajes a plantaciones de cacao de todo el mundo, Bessone adquiri\u00f3 su propia plantaci\u00f3n en Brasil.<\/p>\n<p>\u00ab\u00bfQu\u00e9 quiere decir chocolate \u00abcertificado\u00bb? En realidad nada. Se cultiva cacao gen\u00e9ticamente modificado para sacar m\u00e1s provecho por hect\u00e1rea y el sabor se queda por el camino; no se respeta el medio ambiente\u00bb, se\u00f1al\u00f3.<\/p>\n<p>Asegur\u00f3 que en pa\u00edses africanos como Burkina Faso, donde el cacao est\u00e1 \u00abcertificado\u00bb hay m\u00e1s de 200.000 ni\u00f1os \u00abtrabajando en condiciones de esclavitud en las plantaciones\u00bb.<\/p>\n<p>Por ello ha creado el m\u00e9todo cient\u00edfico de procesamiento del cacao Bessone Method Patent, no solamente para certificar su calidad sino para asegurarse de que su producci\u00f3n es ecol\u00f3gica y respetuosa con el medio ambiente y los campesinos.<\/p>\n<p>\u00abLa propia naturaleza nos da la soluci\u00f3n. Las ardillas son una plaga que se come el cacao. Pueden acabar con una plantaci\u00f3n y no tienen depredadores naturales. En lugar de andar con venenos o pesticidas, en nuestra plantaci\u00f3n de Brasil hemos introducido serpientes, un enemigo natural de la ardilla que mantiene a la poblaci\u00f3n controlada\u00bb, expuso.<\/p>\n<p>Este docente en \u00abChocolate y Cacao\u00bb en el Instituto Internacional de Castigliole d&#8217;Asti es un militante del cacao y sus condiciones de producci\u00f3n y su lucha le han costado m\u00e1s de un disgusto y denuncias en los tribunales internacionales.<\/p>\n<p>Pero Bessone no ceja. \u00abEsto es una guerra. Ni el cacao ni ning\u00fan alimento como trigo o ma\u00edz debiera cotizarse en bolsa. Ese comercio lo paga el pueblo\u00bb, apunt\u00f3.<\/p>\n<p>Bessone es asesor internacional en diferentes proyectos de cacao sustentable en Tanzania, Sri Lanka y diversos pa\u00edses latinoamericanos.<\/p>\n<p>\u00abTodo est\u00e1 en nuestras manos.
